Ingredients nightmare - what do you put in your lasagne?

All I have left from my usual ingredients are mince and tinned tomatoes. I will make the sauce but need something in the mince mix I think.

Mushrooms and courgette diced will pad out the meat more (not sliced rounds of courgette though, as the middle goes to mush and you end up with a circle of red hot courgette skin hanging out of your mouth and burning your lips!)

Some tomato puree or some passata to thicken up the sauce.

I also find a couple of good drizzles of balsamic vinegar gives the sauce a nice dark colour, and gives it a bit of zing.

Onions and mushrooms
Half a teaspoon of sugar to make the tomatoes less 'tomato-ish'
Lots of herbs

In theory you could add carrots, peas, sweetcorn if you wanted to. I tend to leave these for cottage pie.

I use Delia's recipe which is onion bacon and garlic fried til soft, then mince, passata, tom puree, red wine and and Italian herb seasoning. I also add mushroom to pad it out.

I don't need to pad it out as it is only for the kids so the smaller end result is fine.

I made shepherd's pie the other day and put peas and mushrooms in that. I would never put peas in lasagne htough.

Not sure I usually put onions in either.

Mince, garlic, onion, passata, Then veg like mushrooms, peppers, courgettes, aubergine, sweetcorn, tomatoes, grated carrot, spinach maybe. Then wine, Italian herbs, stock cubes, Worcester sauce.

What have you been puttning in?

My lasagne sauce is made of: onions, bacon, garlic, mince, tinned tomatoes, tomato puree, stock, teaspoon of sugar, oregano and basil, salt and pepper, and a glug of either red or white wine. If I don't have any wine, I use balsamic or white wine vinegar.

onions, olives, tomatoes in some form, cheese & lasagnea sheets. Leeks if I don't have onions. More toms than cheese. Olive oil to line the dish.

Whatever i have in the fridge!
Onions, peppers, carrots, mushrooms, tomatoes, courgettes, spicy sausage, herbs, worcester sauce,passatta....... some or all of the above. Don't you think you just know when a lasagne is going to be legendary as you are putting it together!

my mince for lasagne is olive oil, 3 garlic cloves, 2 onions, 1 tbsp oregano, 1 tbsp basil, 1tbsp mixed herbs, 3tbsp tomato puree and 1 can of chopped or plum tomatoes. That does around 500g/1 lb mince. no other veg but DH likes mushrooms or peppers too. This does a lovely thick lasagne mince.
For variation add some pesto instead of tomato puree
