Help needed for vegetarian alternative for roast dinner

I am doing mother's day lunch on sunday (though the ingrediants need to be bought tomorrow morning) and need a vege alternative to the meat, but something that will go with the rest of the meal (roast pots/yorkshire pudding and various as yet undecided veg though probably carrots and kale).

The pudding is nutty so don't want to do something nut based.
I want it to be quite special as its for mothers day.
Only for one person so recipe needs to be able to be scaled down for one.
Also no aubergine or wheat and if possible reasonably low fat (though better something high in calories than fuck all).

I am completely out of inspiration, am going out tonight and have to go food shopping first thing in morning

Any ideas will be gratefully received.

i am veggie and like quorn roasts, but some people don't like meat substitutes.

fake garlic kievs are nice, esp the morrisons ones. or just buy a veggie bake thing, maybe something with mushrooms?

Some kind of mushroom or onion tartlet? Delia has a couple of good recipes I think. Unless a pastry item won't go well with your other accompaniments.

Big fat roasted mushrooms with butter & garlic

Stuffed peppers.

Stuffed cabbage. Yummy but time consuming to make

Stuffed courgette.

Stuffed butternut squash

OK, I like stuffed stuff. But the stuffing can be anything you like, e.g. spinach & something cheesy, or mushrooms, or mushrooms & walnuts, butterbeans / chickpeas / other beans & tomatoes, leek and lentils. Maybe topped with a little grated cheddar/goats cheese and a few toasted pine nuts.

Also, to be honest - with carrots, kale & potatoes (I assume they will be avoiding your wheaty yorkies...) I would think a veg or a veg & bean casserole would be very suitable. Easy to make for one person and there are so many recipes online or frankly, you can make one up...

How about steamed mushroom puddings ... using veggie suet in the pastry.

How about thes pies? I cooked them at Christmas and they went down really well with 3 vegetarians, 2 non-vegetarians (me & DH) and 2 DCs.

Or mushroom tartlets here.

Make separate yorkshires for the veggies with mushrooms, onions, herbs and (perhaps) courgettes baked in, like toad in the hole? Or even toad in the hole using veggie sausages?

If you're using pre-made yorkshires you could cook up some mushrooms/sausages and onions and stuff the yorkshires with them, then drench in onion gravy.

Or perhaps make up some stuffing balls (continuing the roast theme! Wink) with big mushroom chunks for protein.

We had a celeriac, swede and potato bake at Christmas. It was bloody lovely! But uses cream, so not low fat Sad

When my veggie mate joins us for Sunday lunch I just add a cauli cheese to the rest of the veg. VM gets the biggest helping but others can dig in once she's fed!

The Good Food website is good. DP is veggie and I found an excellent receipe on there for a parsnip and cranberry loaf for Christmas. It had loads of chestnuts in though so falls foul of the no nuts criteria!

Am not a huge fan of the quorn roasts myself and reckon some kind of stuffed vegetable makes a much better alternative.

Roast butternut squash, red peppers and shallots (banana ones are really sweet and roast beautifully).
Serve as is or pop in a gratin dish and top with grilled cheese and maybe a few bread crumbs. Will cook along roast as long as your oven isn't as small as mine.

Would make a lovely flab filling, but you said no wheat.

Thank you for the lovely ideas - I'm going to note them all down so I have plenty of stuff for future events.

I assumed no wheat as they don't eat bread but they do eat yorkshire puddings, pastry etc so I think I'll do the wild mushroom tartlets as I have all the ingredients bar the mushrooms and they're not too complicated on top of everything else I'm doing.

what did you go with op?

someone upthread recommended celeriac, potato and swede bake - it's really good if you replace the swede with beetroot
