Sauce for chicken pie?

I have been making a flour/stock/milk sauce for my chicken/ham/veg pie, but frankly - it's not that great.... do you have a recipe you could share that is really tasty?

i usually do a cheesey sauce.

Maybe change the stock you use? Or add a handful of herbs?

I put a bit of tarragon in the flour/stock/milk sauce. Really yummy

How about a bit of white wine and tarragon with some stock (and a little creme fraiche?)

Chicken stock, flour, tarragon, bay leaf, black pepper, mushrooms (or mushroom ketchup).

I cheat and use condensed chicken soup.

add mustard to your flour/stock/milk sauce. Or use Creme Fraishe (sp?) ala jamie oliver. Delish.

Thyme and a couple of bayleaf too.

Shhh- don't tell anyone, but the best thing is to use a tin of posh cream of chicken soup. Baxters is good.

m&s cheddar, leek and bacon sauce is fab in a chicken pie.

i also make my own: single cream, cheese heated up, bacon oddments and a leek. throw in a pie dish in the oven with either potato (like a hot pot) or a pastry lid. done.

I'm a condensed soup cheater too grin Only I use mushroom soup, if that helps.

Thanks all! Will throw some tarragon in this time, and see how it goes, then think about buying different stock - will definitely try with soup too. and not tell people

Try adding a triangle of dairylea. It doesn't really add a cheesy taste, it just makes it more unctious (sp?) if you know what I mean.
