Gluten Free Shortbread Biscuits

I tried This recipe yesterday.

I left out the lemon and added a dessert spoon or so of cocoa and put spoonfuls of mixture onto a cookie sheet instead of making it in a tray. Baked for 10 minutes at around 160c

I have done extensive taste testing on them and they are fabulous. Yesterday they were wonderfully light, crisp and brittle and today, after being in an airtight box, they have that slight fudgey consistency to the centre.

Really fabulous. I think they'd work well with chocolate chips and any number of other recipe adjustments (almond, ginger, vanilla...)
