Buttercream

Any idea how much buttercream I'd need to make to fill and cover the equivalent of a 10inch round? Not sure of the ratio of icing sugar to butter either. TIA.

I'm not sure how much you would need to cover it, but my DD has a great recipe for an alternative buttercream frosting:

450g Philadelphia cream cheese
150g butter
250g sifted icing sugar
10ml vanilla essence

It's not as sweet as a traditional buttercream frosting, and if you use light Philadelphia it also has less calories.

If you have any left over, you can freeze it and use it at a later date.
