my sister in law told me this and it NEVER fails...

6 desert spoons of flour
4 eggs
pint milk (ish)

fat in oven for as long as possible, really as long as possible, an hour / hour and a half if roasting a joint, before adding yorkie mix so that it's super hot, add yorkie mix and cook for twenty five mins.

DO NOT open the oven door!!

= Massive Yorkies!! grin

Gosh 4 eggs is alot! but Im sure very nice.

I did as recommended earlier on MN to:

4oz plain flour
2 eggs
approx half pt milk
pinch salt
animal fat

let the batter rest for 30mins and poured in a square was so light and huge!
