DD has developed an allergy to tomatoes. Her favourite foods consisted of pasta dishes with tomatoes and mince dishes with tomatoes. Has anyone got any nice recipe ideas without tomatoes?

Pasta pesto

Pasta with melted Boursin and fried mushrooms

Pasta with butternut squash, garlic, red onion, cream and sage

I'm a veggie so don't eat mince but Shepherd's pie doesn't need tomatoes, or maybe curried like keema, or fajitas of some sort?

try making a thick-ish sauce using instant soup that you add boiling water onto and just stir. cream of chicken flavour works well.

pasta with roasted vegetables (onion, courgette, peppers)
spaghetti carbonara
pasta with bacon pieces and fried mushroom
I'm sure there's some summery lasagne of jamie's that doesn't have a tomato sauce
Jamie's 30 minutes also has a mince hash which, if I remember right, doesn't involve tomato

baked pasta dishes - add whatever vegetable (broccoli nice) and meat (chicken good) that you like with a white/cheese sauce

This spinach sauce is good. Its easy to make, freezes well and seems popular with all the children I've given it to.

1 large bag fresh spinach, washed or 100g frozen spinach
15g butter
2 tbsp milk
2 tbsp cream cheese (boursin is good)
4 tbsp parmesan cheese, grated
a grating of nutmeg

Put the spinach into a colander and pour a kettle of boiling water over to blanch it. Gently press out the excess water. If using frozen spinach, cook according to the packet instructions.
Meanwhile, melt the butter in a small frying pan and sauté the cooked spinach for a couple of minutes.
Combine the spinach with the milk, cream cheese and nutmeg and blend in a food processor.
Mix with the cooked pasta and sprinkle the parmesan on top.

There was a nice recipe in the times a few weeks ago for orange spaghetti. As far as I can remember it's as follows:

Melt 50g butter in a pan and fry about 10 sage leaves until they are crispy. When they're done remove sage leaves and keep for later. To the butter add one chopped onion (or a similar amount of chopped shallots). Cook until they are soft. Add approx 400g sliced carrots (I think I used about 3 medium carrots) and continue to cook on a medium heat for about 5 mins. Add approx 300 mls chicken stock and cook for a further 20-25 mins. Basically you want the carrots to absorb all the stock and go really soft. If need be add more stock and continue to cook the carrots. When there's only a teeny bit of stock left and the carrots are really soft and well cooked add back the sage leaves and puree to a smooth mixture (you may need to add a bit more stock to give it a smooth texture) and season. Serve with spaghetti. In the recipe they said to add toasted pine nuts but I know my ds would have turned his nose up at it. It's really nice with lots of Parmesan, the saltiness of the cheese goes really well with the sweet smooth carrots.

Does dD like Asian flavours? Minced cooked with things like lime and lemongrass etc can be delicious instead of tomato?

Or look for a bobotie recipe - south African mince dish made with dried fruit, chutney and curry powder. It's heat free though - v mild curry powder or a combo of spices such as cardomon, cinnamon, cumin etc. I have a good recipe somewhere I can track down if you like.

Simmer olive oil gently with some garlic, chilli, basil and lemon juice. That's really a summer one though.

make a cottage / shepheards pie / bolognese mix....

but instead of tomatoes add some gravy, or some stock and gravy browning.

Its still yummy like that! Smile

(aswell as mince / onions i always add carrot and garlic, and often peppers / mushrooms / courgettes / herbs / worcester sauce as well)

Thanks so lovely suggestions on here. Nannyl do you really do bolognase with gravy? Does it still taste nice? I remember when I used to go to guide camp they used to make a mince curry, any suggestions on how I could do that minus tomatoes?

DD is also allergic to mushrooms so would have to omit those from the recipes

You could make your own passata substitute by sweating until soft onion, carrot, celery and plenty of red peppers with the skins removed. When nicely softened blitz it up in a food processor and then use it whenever you would normally use passata or chopped tomatoes.

yes.... my old boss did it.... it would never have crossed my mind until then.

I dont normally do it (as i have no issues or allergies with tomatoes) but i have eaten it, and especially with loads of other veg & stuff in, and maybe some grated parmesan on the top its a perfectly good spag bol IMO.

DP is allergic to tomatoes so we replace them with roast peppers, skinned and chopped/blended as the recipe needs. Works well with pasta/pizza/curries.

I use lentils in bolognese and lasagne.

If she's allergic to tomatoes be careful with peppers, aubergine and potato as they're all related.
