peach crumble

I went to a cafe on Saturday and ordered peach crumble with cream - yum! Well it was blinkin' awful - made with TINNED peaches (in summer, why???) and the crumble was just sad. I can do better than that!

So my question is - do I need to add much, or any, sugar to the peaches when I bake them? Any other tips also gratefully received. TIA
