Help!! Need to start more healthy cooking!!

Family of four (soon to be 5) 2 adults, 6 year old and 17 month old.
Am expecting dc 3. Me and dh work full time so go for quickness and convenience, but our meals are not healthy enough.
Can anyone recommend a good recipe book for quick cheap, healthy family eating?? Or share a meal plan??
Would be hugely appreciated!!

Have a look on Amazon at the Hamlyn cookbooks - the slow cooker book is fab, there is one called 200 family favourites, 200 budget meals. I use Hamlyn cookbooks often, the recipes are easy and yummy :)

I second getting a slow cooker. Bung the ingredients in while the kettle is boiling in the morning, come home to a meal that has cooked itself Smile

Bulk cook healthy stuff when you have time so you can have a 'freezer meal' on a work night.

I do have a slow cooker. Made a couple of things that were really bland but will look out for those books. Thanks for the tip!! Smile

I find with the slow cooker - if you have time it does pay to brown the meat/onions first with some of the herbs and spices

You can health things up quickly. Make wedges instead of oven chips (just cut up spuds, bung in hot oven with a slug of olive oil and a sprinkle of spice if you want and turn after 20 mins). I try and balance out unhealthy stuff, so we'll maybe have sausages with a mountain of roast veg, which is really quick to prep and cook.

What about things like fajitas or frittata? Kids love them :)

I always make my own wedges, as GreenTeapot says just chop a load of spuds, preheat oven (I do mine 200 fan assisted) and spray liberally with fry lite and bake for 30mins. Everyone enjoys them from soonn to be in-laws, DP's DS and friends.

Also I made a pasta sauce for tonight using a carton of passatta, grated in a courgette, a carrot, chopped some peppers in, threw in some rather soft cherry tomatoes that were in my fridge, onion, smoked paprika, oregano, basil, mild chilli powder, tiny bit of cumin. That will now simmer away until the vegetables have dissapeared! I'll probably use it in a tuna pasta bake this eve for DP's DS and his little friend.
