Urgent! Has anyone got River Cafe cookbook Green

...who can remind me of the dried porcini mushroom and tomato risotto recipe? On holiday, and can't find it on . Thanks Smile

100g porcini (soak in 250ml hot water 20mins)
6000g tinned peeled plum toms drained
1.2l chicken stock
salt and pepper
100g butter
3 tblsp olive oil
2 red onions finely chopped
inner heart white celery finely chopped
3 garlic cloves peeled and chopped
2 dried red chillies crumbled
300g carnaroli rice
2 tblsp chopped flat leaf parsley
parmesan

drain and rinse porcini
heat butter and oil
fry in onion and celery, add porcini, garlic and chilli
stir in rice, add toms and salt, add stock ladle by ladle interspersed with porcini liquid
stir in parsley, butter and parmesan

sorry for short hand instructions (DS 8 mos helping!)

Have got 3 River Cafe books and never cooked a single recipe, you may have inspired me, thanks.

Grin phew, fancy trying the recipe but not that keen on tomatoes...

Thanks so much, Lakeflypie, that's so kind. Can thoroughly recommend this recipe, and the sausage pasta and aubergine pasta recipes in the blue book too Smile
