Guaranteed hit, just made for lunch, mega cheap too

I must say I was dubious when it said on the reviews (Netmums I think?) how popular this dish is. But it was unbelievably so!! Shock Dss inhaled it for lunch today and wanted more. Luckily I had made some for dp who works nights. Seen as he is unaware I gave the extra to dss Wink

So here it is chickpea Enchiladas

1 tin Chickpeas
1 tin Tomato toms chopped 1 tbs tom puree 1 tbs oil 1 onion chopped
1 tsp garlic puree or 1 clove crushed 1 carrot grated
1 Pack Tortillas White sauce or creme fraiche or soured cream
Grated cheese

I also added bit salt, pepper and smoked paprika to ours. You can add what you want.

Soften onion in oil. Add Toms, chickpeas, tom puree, carrot, garlic and seasoning of choice. Simmer 10 mins til thickened. Roll mixture into tortillas (i used 6) Top with white sauce or other. Sprinkle with cheese. Bake 180c for 10 to 15 mins until bubbling. Then inhale Grin Well, I did Wink

Mmm, does sound nice. I have done similar many times right up to the bit where you put it in the over. Never done that and I bet it makes it lovely.

Ỳes it's lush. I think it's so popular with the dcs because of the sweetness of the carrot and tomatoes?

Just have to think what to give dp now Confused Wink

Blurgh to tinned tomatoes though!

I do this one -

buy a packet of ready chopped sweet potato and butternut squash and cook it briefly in the microwave;
meanwhile fry onions and garlic and add a bit of turmeric, lots of paprika and some chilli flakes or fresh chilli and lots of coriander;
mix the two together and then mash it a bit before adding a drained tin of chickpeas and some baby spinach leaves;
fill and roll tortillas and put in a baking tray;
top with lots of grated cheese and bake until golden.
Eat with a homemade salsa and/or spiced rice /salad.

Made it again tonight as dcs wanted some.

White sauce is just bechamel LadyClarice. Very easy to make.

Like I said you can add spice if you want. Dp and I would have it spicy. You really don't need meat and we're all meat lovers.

Nothing wrong with tinned toms now and again Remus. The flavours all blend together. I think this is more a dish that can always be available to do you don't always have fresh spinach and butternut squash around Grin

I just hate tinned tomatoes. Wish I did like them but I just can't do it!

Fresh coriander, Lemon. Oh and you've reminded me that I normally squeeze some lemon juice in too. :)

I do something similar with kidney beans, always goes down well. DS (3 next month) like it spicier than DH (36, lightweight).

Do you like qaesadillas too? That's another of our quick and easy favourites:

Put grated cheese, chopped pepper, chilli, onion, coriander, whatever on a tortilla and put another tortilla on top. Fry on both sides until golden. We like them with a salsa made of red onion, red pepper, mango, coriander, chilli and lime juice, which is a v good way of getting vitamin C into salad-refusing dd2!
