"fry"-free chicken/fish nuggets or goujons recipes?

Hi there,

DS2 (12 months old) is seeing a nutritionalist post reflux and dairy intollerence and she has heavily advised that DS2 avoids all 'fried' foods. A lot of his food is homemade but he loves chicken/fish cakes/goujons/nuggets which I have just always fried in a bit of olive oil.

Does anyone have a recipe that involves making any of the above that can just be baked/grilled but still have a crispy coating! Or can all regular recipes just be baked/grilled with good effect!?

I oven bake all those things, because i hate the fying pan Grin for fish etc, you can wrap them in some foil and oven bake, and goujons/nuggets etc come out the same baked, and just as tasty!

I make fishfingers with whatever white fish fillet is cheap and plentiful, as follows:

cut fish into fingers
dip into flour, then beaten egg, then crushed cornflakes
bake

My son loves them! You can also freeze them once they've been 'crumbed', and cook from frozen like shop bought fishfingers. I'd imagine it would work with chicken too :)

Hooray - DS2 is not enjoying my alternative healthier options...he is missing the crispiness. Will attempt baked goujons etc!

Instead of the cornflake coating you can also use couscous :)

Dipping fish or chicken in mayonnaise followed by breadcrumbs and then baked produces lovely crispy goujons too.

if you come back to this thread try this
cut chicken in strips, roll in olive oil. grate Parmesan cheese and mix with breadcrumbs, then roll chicken in this pressing all over. bake in oven, 180c for about 15 mins depending on thickness of chicken. kids love this, never fails.

the trick is put on baking tray bake for 15 mins then turn and bake for 5

so you get proper crispy - especially with the cornflake type

Thanks so much for all the replies. The parmesan sounds delicious and will try in the next month when we reintroduce dairy.

In case anyone reads this thread with an interest in helping relieve the reflux, DS2 seems to be responding really positively to not having fried foods. He has had a persistent cough his entire life and is treated with Singulair (an evil asthma medication) and an inhaler. In the last week it has dramatically improved and has stopped waking at 5am coughing. Literally the first time in 12 months....

So thank you all - a happy Mummy and a happy child :) :)
