Exhausted, no inspiration, cupboard bare

Please come and tell me what to do with 5 chicken breast fillets for dinner.

I have the following:

onions & garlic
parsley
a cauliflower
pasta, rice and the like but no potatoes
celery
the chicken breast fillets.

Bother.

Yes to paprika, no to the other stuff. Unless buttermilk would do?

(How do I have buttermilk but no potatoes or green veg or anything remotely sensible?)

Tricky... Cauliflower always screams cheese to me...

Tell you what, just cook the stuff. Hungry people will eat. Serve grilled chicken with plain rice and cauliflower on the side. I have no imagination either! Grin

If you MUST do something, what about cooking the rice and chicken and then frying them up together with onions, garlic and soy sauce (please have soy sauce!) and calling it chicken fried rice. Add an egg if you have one.

chicken breasts poached, chopped up, served with parsley sauce and mixed with pasta? Like a tuna pasta bake but with chicken?

Stuff the chicken breasts with the mozerella grill then serve with the pasta in a white sauce with added garlic?

Thanks for all your suggestions. I found a red pepper lurking at the back of the fridge and remembered there were about 10 cooked king prawns in the freezer, so I've done a paella-type thing:

cooked onion, garlic, red pepper, celery and finely chopped parsley stalks, slung in rice (not paella rice, not that organised Grin), pinch of turmeric, generous pinch of smoked paprika, splash of white wine and then chicken stock to cook in the manner of a risotto. End of a bag of frozen peas mixed in when the rice was done.

Meanwhile cooked the chicken in the griddle pan, then sliced the cooked chicken and mixed it into the rice with the prawns.

Bit of chopped parsley leaf on top.

Actually it was delish, or at least DS1 and I think so. DS2 and DD have picked out all the prawns and chicken and just moved the rest around their plate, but I don't suppose they're going to waste away overnight.

Must bookmark the site shubie linked to, that could be very useful.
