Cold Roast Duck.. Ooh, the anticipation!

I have half a cold roast duck in the fridge. Am trying not to dribble on my keyboard thinking about what to do with it... Am thinking hoi sin wraps, but want more suggestions!

I would make bang bang duck:

I love that dressing, I always make twice as much and then use it on cold noodles. You don't have to use chinese sesame paste - tahini or even peanut butter works a treat. And if you don't have chinkiang vinegar you can use sherry vinegar and a teaspoon of five-spice powder.
