Ideas for birthday lunch for friend

Hi

I am doing a birthday lunch for my friend tomorrow and quite stuck for ideas, and quite open to anything.
There will only be three of us for lunch (3 adults) but if possible would like to give the same thing (leftovers) to my husband and son for tea, as really don't want to cook a big lunch then clear away and cook tea!

Having Pavalova for dessert and was also thinking of serving Pimms.

Perhaps something like chicken cacciatore? Fairly simple but tasty, can serve with roasties/pasta/rice and whatever veg you want. Just make a big batch and save some to reheat later for DH and DS.
