Does anyone know how to make those biscuits that you cut a hole/shape out of the middle then fill with crushed boiled sweets to get a stained glass/gem type look. Want to make some for DDs birthday to decorate cake. (Pirate theme, was hoping to make them look like jewellery). I know the theory behind them, but not sure what biscuit recipe/dough to make! Confused Please help!

Any cookie type biscuits really, tend to bake for half the time then put the sweets in and bake for remaining.

Be careful though, melted boiled sweets burn like buggery!

Oh and make a few extra than you need to allow for ones that break when removing from tray

This is the recipe i used once and they worked
Heat oven to 200c/ gas 6
Mix together 280g plain flour and 1 tsp baking powder. Rub 140g chilled diced unsalted butter into it to breadcrumb consistency. then add 140g castor sugar. Bind the dough with a whole beaten egg and leave to 'relax' for 20 mins. Roll out on a floured boardto 1/2 inch thick and use pastry cutters to cut shapes, put on tray lined with baking parchment.Cut a 1inch hole in the centre of each and if you want to make medallions use a straw to cut holes for ribbons. Place half a boiled sweet in each hole and bake about 12 minstill sweets are melted and bisuits pale golden. Allow to cool before lifting off paper with a spatula
Good luck!
