The recipe called for double cream, I used whipping and the lime juice has curdles it. Why?!

Dessert is ruined. I am a cream fool. What is the difference? I made the same recipe last week with double cream and it was delicious. Today, curdles limey slop. sad

Ahem, curdled. Damned whipping cream has even spoilt my ability to spell. angry

Probably not enough fat in it to emulsify it or something like that.
