Got some mild curry paste, what can I do with it?

I ordered it so I can put some in a chickpea dip, but obviously will have lots left over.

Can I use it to make coronation chicken? If so, how?

Any other inspiration would be lovely, I've never used it before. :)

For corination chicken, I think you'd just mix a teaspoon of it (and maybe more if needed) in with with mayonaise or plain yogurt and throw in a few raisins.

My mum does cold pasta with a bit of curry powder and mayo plus spring onion and raisins, goes well with a bbq. Should think curry paste would also work.

And maybe a tiny bit spread in a sandwich with mango chutney and brie.

I do a really mild "curry" for my boys (age 3 and 6 months) - cook some veg/ leftover meat or chicken in stock, add a couple tablespoons yoghurt and a dollop curry paste, it's pretty bland but they love it.

You could also mix it with plain yoghurt and use as a marinade for barbeque chicken or lamb.

Nicked this from the Olympic Cookbook, my DH and DS love it:

1tbsp curry paste
Juice of 1 lemon
2 fat cloves of garlic, crushed
100ml plain yoghurt
Chicken breasts x # of people

Mix the first 4 ingredients together. Slash the chicken breasts and marinade overnight or 30 mins if you don't have time. Grill chicken for 5 minutes each side under a pre-heated grill, basting with left-over marinade when you turn them over. Serve with couscous salad:

75g couscous per person
1/2 cucumber, cubed
1 sweet pepper, cubed
1 tomato per person, chopped into small pieces
1 small tin sweetcorn
Handful fresh coriander, torn

Make up the couscous, then mix everything else in. Servie with the chicken. Yum!

You could use it in this recipe I reckon.

I'd almost forgotten about that recipe actually - I used to make it years ago (although it's dated 2011 on the website it was first published back in about 2004). It's lovely.

Obviously how delicious it is will depend on how lovely the curry paste is though.

Mix it with mayonnaise and use it as a dip.
