freezing en croute

hello

i'm making this gordon ramsey recipe for salmon en croute but with tilapia and making individual ones

our guests that were supposed to be coming tonight are no longer coming, can i freeze the extra ones (obviously uncooked)?

the fish i bought is suitable for home freezing, it arrived in the ocado shop on tuesday and has a best before tomorrow, has been in the fridge since tuesday.

i'll be making my own pastry

also any tips on best ways to freeze? i usually wrap in baking paper and then put in zip lock bags

Sounds like a good plan to me. I think the shop made ones are often uncooked and they can be frozen on the day of purchase so why can't yours? I also like the idea of wrapping in baking paper individually and then in bag. Freeze promptly and then when you want to cook them defrost over night in fridge and then cook as normal. I'm sure you can also cook from frozen but I'd be afraid of still frozen inside with overcooked outside personally.

Great thank you.so you think the fish should be fine too?I guess I was worried cos they always say freeze on day of purchase. But it's still within the best before date so it should be ok?
