Risotto

Never made a risotto, hate cooking but am bored of having the same thing and risotto sounds fairly quick and easy.
But i don't know what to put in it
So please tell me your best risotto tips and ingredients
no mushrooms...can't do mushrooms!

My favourite is leeks, peas and courgettes with veg stock, parmesan and herbs. It's lovely.

Pea and prawn. chicken and leek. Just use the appropriate stock and a good slosh of wine and its lovely and easy.

You need 40 minutes to make it. You fry some shallots (onions will do) in a little oil. Add the risotto rice stir for 30 seconds then add a glass of white wine. After about 1 or 2 mins add stock. Keep adding it and stirring until it is ready to eat.

All leftovers are lovely in it but my favourite is parmesan, pancetta and peas (if you use pancetta fry with the onions). Delicious.

Pea and leek is a good basis (with 50/50 veg and chicken stock). Cook the leeks in a little butter. Slosh of wine if you have some around, but no big deal if not. Rice in. Stock in. Season well with pepper (enough salt in the stock), then peas in for the last 5 mins.

Then you add whatever you want to the base. Our two favourites are left over roast chicken (in when the peas go in) and smoked salmon (the off-cuts are pretty cheap now and no one can tell, we just sprinkle this over the top when we serve).

Agree with Senorita that pancetta goes in very well with that. Sundried tomatoes would work too. Plus any simple veg - courgettes, asparagus etc.

Not quite rissotto but last night someone made me smoked haddock and rice, it was white rice with a bit of wild rice in and stirred through it smoked haddock, peas, a wee bit of tartare sauce and creme fraiche and it was very nice and quick and easy

I do an oven baked one with chicken and chorizo , cherry tomatoes, garlic and onion.

The recipe is just like the one linked to above .

Normal risotto is easy but the oven baked ones are even easier.

My daughter loves risotto and so do I. I?ve tried Little dish just so that I know what my alternatives are when it happens that we don?t have home cooked meal ? though our freezer is always full. I couldn?t believe my daughters reactions. She made face like I am feeding her sour milk and even started bringing food up her stomach in order to vomit it out - so bad it was.

I tried it and it is in fact bad! They are right when they say nothing added but natural food but unfortunately ingredients that they use are of very poor quality. For many people who never had home grown food that can never become an issue simply because they can?t taste a difference. My husband is one of those. To make a point I cooked a simple risotto with just water, chicken, wholegrain rice and peas. Nothing else added and my daughter ate full cup no complains.
So what?s wrong with little dish? Well, it goes like this. Do you know Waitrose supermarkets? They are a perfect example of bad and good quality food. I dare you to try an experiment. Cook home made chicken stock. Do that by boiling 4 main ingredients. Chicken, onion, carrot and tomato. Only in one pot you put Waitrose essential veggies and into the other pot put organic or perfectly ripe range veggies and free range or organic chicken. Boil gently on minimum heat for 1 and a half hour. Add salt as well in both pots. End result might surprise you!

The lower the quality of ingredients, the lower is quality of food! Little dishes are tasteless and quit frankly disgusting. Your children deserve better!

This is how good home made risotto should be prepared:


Chicken stock
Free range tights with bone 500g
1 big tomato (Jack Hawkins, plum, cherry, vine etc are all good as long as nicely ripe)
1 big golden onion
3 large organic carrots (carrots give sweetness and nice taste to the soup so its very important you use tasty organic ones
Salt
Parsley
Celery (optional)
Remove skin from chicken tights and cut meat from the bone. Save meat, put bones with veggies and salt into pot, cover with water and simmer for an hour and a half. Mean while cut meat into chunks, chop one onion, bit of garlic and fry all together. After chicken stock is cooked, sieve into pot and add cup of rice. Cook. Half way through add chicken, chopped basil and peas (fresh if you plan to freeze food otherwise frozen are ok.) If you prefer red risotto you can add can of organic plum tomato pulp. Other wise you are all done.

I know this takes time. That?s why you should consider freezing food for you child. If you don?t have time to cook as much this is the only way your child will get to eat good natural food.

Pea and Prawn Risotto:

Boil a kettle and mix a pint of vegetable stock (your favourite brand, or low salt for babes)
Fry off the prawns and set aside
Stick a chopped onion in oil and sweat it a bit
Add the rice and stir for a minute or two
Add a glass or two of white wine, keep stirring
After a minute add a ladleful of stock, keep stirring
Keep adding stock as it gets absorbed
When all the stock is gone, add a handful of parmesan to the rice
Serve (with the rest of the wine in your glass if you're an adult)

Takes no more than 25 mins start to finish.

am a bit confused about the Free range tights with bone 500g
would stockings do and should I use 15 or 30 denier?

Can you use the wine if serving to DC?
I'm always afraid I won't cook alcohol off properly if I add it to recipes. Don't want drunk toddlers rampaging through the house.

Haha no, alcohol is cooked off definitely, it's added first so plenty of time to cook. No need to add it though, just replace with a bit mire stock.
