i want to be super organised as am at work on saturday, how soon can i make them without them going stale?
Depends on the recipe, but I would make the cake and the cupcake bases on Thurs or Fri, let cool completely, and double wrap in clingfilm and store in the fridge. Or do cake Thurs, cupcakes Fri.Then Saturday night, unwrap and ice cake and cupcakes, store in fridge overnight, and serve. (Or if you are working late, wake up early on Sunday morning and ice them then).
