I've bought some asparagus for dinner this evening. I've tried cooking it before but it comes out awful - nowhere near as nice as when I've had it out. So how do I cook it properly? I think I was overcooking it before (steaming). Someone said to pan fry it in butter - is that a good way? How long do i cook it for and do I need to cut the thicker parts of the stems off first and cook those longer? thanks
The woody ends of the stalks need removing first. If you hold the end and snap the asparagus, it should break off naturally where the hard part ends. You don't need to cook the rest of the stalk for different lengths of time.
You can steam, boil or microwave it. Boiling takes about 7-10 minutes depending on how thick it is. You can give it a poke with a fork and when it's soft it's done.
but i quite often just do it in a simpler way - don't bother with all the bundling up, and it doesn't need the anchovies/pancetta if you don't like them, just roast in oven for few mins with lots of olive oil and lemon juice - really delicious
