my chopped frozen potatoes have gone a funny colour!

A few weeks ago, I chopped up a loads of potatoes to make hotpot/hash (whatever you call it) and froze them.
I got them out today to defrost and they have gone all soggy and brown as they are defrosting...have i done something wrong? Can you not freeze potatoes?

Not unless cooked.

I know you can parboil for instance before roasting and then defrost and roast.

You've given them freeze-damage. If a field of spuds gets frozen before they can be lifted they do the same sort of thing. The water in the potato expands as it turns to ice-crystals, breaking down the cell structure so, when you defrost, the cells collapse and you get brown mush.

Cook a potato, on the other hand, and that breaks down the starch first. Then, when you freeze, there's little to no deterioration.
