Probably a stupid question but I never cook do I make a yummy omlette using;
feta cheese?

Beat eggs with salt and pepper, melt butter and a splash of olive oil, add onions and soften add garlic and soften and add mushrooms. Fry all that a wee bit and add eggs, swirl about a bit (or use a fork and bring outsides to middle. Add feta and cook gently till only just set, fold in half and slide onto plate.
I would also put some potato and bacon in (fry them first so potato cooks through and add bacon with onion)
Also i would top with grated cheese and leave flat and crisp top under the grill
Some herbs would be nice in it too-a little dill?

Hi Libbyou,

Omelettes are very easy with practice! Like most things!

Make your basic omelette like this:

• Chop about 1/4 the onion and garlic into fine pieces.

•Slice the mushrooms and fry gently in the butter until soft. Keep aside.

• Saute(gently fry) the onion and garlic in a little butter in a heavy bottomed pan for about one minute.

• Beat the eggs lightly with a little seasoning of salt and pepper.

•Add the eggs to the pan with the onions and garlic and cook the omelette for a half a minute in the pan.

• Just before rolling the omelette, add the mushrooms and feta cheese and cook for about half a minute.
