Which butter do you use for your buttercream?

The last buttercream I made tasted too much of butter even though I thought I added enough icing sugar and vanilla extract Hmm

Unsalted Lurpak.

It does sound as if you need more icing sugar though if it is tasting really buttery.

Unsalted whatever's on offer.

You need twice as much icing sugar as butter, if you want the mix to be looser, add a little milk.

I'm going to attempt it again tomorrow and after 10 minutes umming and ahhing in the fridge aisle of morrisons today I did in fact get Lurpak (always buy unsalted butter anyway) although I have to confess that it was DD3(4yrs) who picked it up as she was bored and liked the silver and red packet Grin

I second the unsalted.

Mainly because other people like it. I'm a salted butter freak and even like it in butter icing.

I know........

Lots more icing sugar and flavouring of your choice.

Love rose water, but vanilla is good too.

I use 3x icing sugar to butter, with some hot water. And I prefer salted.

Missmartha my mother is a salted butter freak as well Grin

She loves the salted welsh butter on pancakes (the thick american style ones)

How did it go?

If you're making a chocolate cake and feeling mildly extravagant, add some choc ganache to the buttercream - it is soooo lush!

Ganache recipe: 75ml double cream, 175g dark chocolate in chunks - heat the cream in a m/w for 1 minute, melt the chunks into it by stirring vigourously, whisk into the buttercream (quantities assume you are making buttercream with an entire 250g pack of butter, so adjust accordingly if not!). To die for...:)

Echire butter unsalted.
Made butter cream for the first time today and it turned out really well.
Followed Jemma cupcake on YouTube and her book.

2oz butter, 4oz cream cheese, 8oz icing sugar and either, vanilla extract, cocoa or lemon. Yum
