You need to turn them over and put some olive oil on them in the oven so they crisp up and don't stick.

Overcooked in microwave? This sometimes happens to me. Cook them in micro in 2 min bursts and keep checking how soft they feel. Don't need to prick them, really, just give them a squeeze with oven gloves on.

You need to turn them in the microwave, or use a gadget that holds them up

I think its the microwave that does this (it does it to mine sometimes anyway!), do you put them on paper towel when you put them in the microwave? That helps, also make sure you turn them a few times. Is that 10 mins just for 1 potato?

I microwave until nearly soft, then put olive oil on and put directly on the wire racks in the oven so they go crisp on the outside.

If you put them on a hot baking sheet/tray in an oven they will go hard where they touch the hot baking sheet/tray.

they shrivel first in the microwave then burn in the oven

Hard crust is caused by heat developed in whatever the potato is standing on while cooking. Poke three cocktail sticks into each potato so it stands firmly about one inch above turntable. Cook about 6 minutes for one, ten minutes for two medium potatoes. Remove cocktail sticks before serving. (Economy hint: use cocktail sticks from last night's G.T, washed,of ccourse)

Why are you resurrecting zombie threads about jacket potatoes?! Hmm

Hi BIWI, Why are you reading them?

Because it's on active. That's why people read them! What's with all the zombie threads lately? There's plenty of current ones.

i found that if you put 2 tbs of water in a bottom of a boil place the patatoe in thier in the micro wave 3 mins then flip then 3 more mins is great and no hard bits :)

I don't care if it's a zombie thread - I've just learned how to microwave potatoes successfully using three cocktail sticks. Genius!
