Freezing sarnies?

DD1 has just started full time school and with it packed lunch 4/5 days, (one school dinner a week). I'm missing her terribly and want the time I have with her to be "quality". Thing is I end up barking at her every mornng as we're always running late!

I sometimes manage to do lunch the night but not always. Wondered if I could make and freeze ham sandwiches? Or would they be horrid?

Any other tips on a stress free morning would be much appreciated!

I think it depends on the filling. Ham would be ok - or meaty things which you would freeze anyhow... and maybe grated cheese. I'd say make one, and try it yourself to decide.

Have you thought about maybe making a bathc of somethign like roast veggies and then giving her wraps for 2 days - you could add some cheese in one day and houmous/chicken the next?

BTW haven't got kids yet, but I used to do the roast veggie thigns for when I was on teachign practice and didn't have energy to make lunch every day....

Worth trying but I did this the other day as we had a really early start and a massively long drive but the bread was really dry on the outside even though I put them in freezer bags.

Actually - maybe rolls might work better than bread in retrospect - especially with what holly said.

And like MadmDeathStare's idea of mini pies, etc.

Yes, rolls! Simple but brilliant! I'll get some. madamdeathstares, your lucky children! All sounds lovely.

i'd do pasties and sausage rolls. Do you make your own pastry or use shop bought? And when do you freeze them? After cooking or before? Any particular web site you could recomment for recipes?

Great, thanks! She's a real ham sandwich girl, not too keen on many other sandwhich fillings, but otherwise not a fussy eater. I'll definately be doing the pasties. DH can have a few in his lunchbox too.

I've just done the Tesco shop today. I got rolls and have made 6 ham rolls and frozen them so I hope they work! I'll sample one before sending DD off to school with them.
