Can I make a big tub of icing and keep it in the freezer?

Ds is dairy intolerant. When we go to birthday parties I take a piece of dairy free cake for him to enjoy when everyone else is eating birthday cake. I often either have some dairy free cake knocking around, or have time to make something, but I never seem to get organized enough to put icing on it.

If I make a tub of icing, can I keep it in the freezer and scoop a bit out to dollop on a piece of cake for birthday parties?

And if I can, what recipe would you use?

Just icing sugar and water (and colouring prob)?
Or marg and sugar?
Or something different?

I think it would be difficult to take out a bit of icing without the whole lot being defrosted and refrozen- which could allow bugs to breed.

butter (or rather marg substitute)icing does freeze fine - could you maybe freeze it in ice cube tray then pop out, so you can easily defrost a small amount

or, just freeze ready iced cake in portions?

yes you can freeze it - but you will have to freeze in little portions (perhaps in an icecube tray?) as otherwise it will freeze in one solid lump.
