I am making an apple pie using some cooking apples that I had previously frozen. Now they have thawed they are brown despite being put in water with lemon juice before freezing. Can I still use them or will they taste horrible/make people ill?
I don't know, but I am fairly sure that they will be mush. It is fine to freeze cooked apple, because you have already broken the cell walls down when cooking, but to freeze them uncooked will break the cell walls down without evaporating any of the juices.
