I've just gone through my freezer and larder and listed everything. Can you come and help me decide the best way to use up all this lot ?

We seem to have accumulated a lot of bits and pieces over the holidays which I would like to use up.

Here's the list; it's copied from my Excel table Blush and I've sorted it by food type, rather than if it's frozen or in the cupboard:


1 pack rolls
1 pack large soft prezels
1/2 paneer
tiny bit of ice cream
2 single fish in breadcrumbs
1 fish in sauce with crumb topping
1/2 pack smoked salmon
1 small pack smoked salmon
1 small smoked mackerel filet
1 small smoked trout filet
1 tin tuna with vegetables
1 tin sardines
1 tin mackerel
1 tin mackerel in tomato sauce
1 bag raspberries
1 bag blackberries
1 tin fruit coctail
1 small tin pineapple
1/ pack dill
1/2 pack parsely
1 pack bacon
1 pack chipolatas
2 pack eng. sausages
1 pack nurnberger sausages
1 turkey filet
1 tin corned beef
2 bags walnuts
1/2 pack pinenuts
1/2 pack schupfnudeln
1/2 pack rice noodles
1/2 pack polenta
1/2 pack long grain rice
1 pack risotto rice
pasta - various boxes
1 pack strudel pastry
1 large tin white beans
1/2 pack small green lentils
1/2 pack split peas
2 cartons passata
1 jar seafood sauce
1 jar picalilli
1 tin coconut milk
1 bag spinach
1/2 pack peas
2 bags green beans
1 large tin sauerkraut
4 tins tomatoes
1 tin bamboo slices
1 tin olives black
1 tin olives green
1 pack sundried tomatoes

I also have a large selection of various cheeses in the fridge plus a box of crackers, and a very well-stocked herb and spice rack.

I don't need actual recipes (unless it's something v. unusual and not Googlable), just suggestions, preferably things which need as little extra bought ingredients as possible (fresh veg excepted).

Not bothered about meat-based stuff, so would be happy for veggie ideas. Though I do need to use up all those sausages!

I'd be ever so grateful for any creative suggestions!

jambalaya for the sausages some of meat, fishes and rice fish curry,
fish pies,
chinese style fishes
pulses and sausage pots
smoothies, milk shakes, ice creams for the fruits
sauerkraut should used some of the sausages too
soups with the tins tomatoes and sea food sauce
Italian something in it too... Grin

Thanks for the suggestions, and especially to JakeBrake for taking the time to post that Hmm

The smoked fish are causing me the most problems, as I would usually just eat them as they are, but we received so much I had to freeze it in the end.
Can I use it in a fish pie? Do you think that would work?

Jambalaya is an excellent idea, haven't made that for ages!

I've been going through my recipe books/cards and I think toad-in-the-hole will be good for using up some of those sausages, plus can do peas and green beans on the side.

I imagine you could use the smoked mackerel and trout in a fish pie, possibly mixed with potatoes so it's not too fishy IYSWIM, but they might also be my dislike for fishy fish coming through.

You could make a berry and fruit strudel with the various fruits and pastry

For the rolls, you can blitz them and freeze them to use as breadcrumbs over the next few months. You could also bash the turkey filet down (possibly) and make schnitzel.

But - you have an excel table with food on it?!

Ther are several nice recipes for green lentils with sausage: fry sausages in pan till browned, add chopped onion, celery, carrot (chopped v small) enough lentils for number of servings and enough stock for the lentils, add black pepper, bay leaf, cook til lentils and sausages done.

Smoked salmon and other fish is nice in creamy pasta dishes, or in quiche - perhaps with spinach or peas. Pea and smoked salmon pasta, smoked trout and spinach quiche.

Or just leave them in the freezer until you need nice sandwiches ot a light lunch / little starter.

pea and ham soup ->split peas and half the bacon
polenta and the bacon as a main lunch or breakfast
olive bread for the green olives - the 30 min batter kind
black olives, pinenuts, and sundried tomatoes -> pasta sauce with some sausages / tossed with the spinach for salad
sausages and green lentils is classic obv
also a grand pasta supper is sausages, parsley, onions and cream stirred up
roll out the strudel pastry, wrap up the berries with a spoonful of sugar, bake for 20 mins, or if you have eggs, make some meringues and eat all the berries piled on top of the meringues
parcel of fish with dill on plain long grain rice with green beans is v light and refreshing supper
poorkid's cassoulet - 3 sausages, onions, white beans, stock and bay leaf over rice
pea risotto! add the salmon

Can I just say be careful with the pinenuts. If they have been open for a while I would chuck them.
A few months ago I had pinemouth from nuts I had open for about a month. It is utterly vile!

Some pinenuts can have a horrible metallic taste, it depends where they come from, I think Chinese ones are not good. There was an article about it in Which.

I'm having the same problem!

The pulses and spinach and coconut milk would make a nice veggie curry/soup.

The green beens and pineapple could go in a Thai green curry with chicken or pork or prawns

Corned beef cut into chunks, with some softened onion, an oxo cube, bit of water, some chunky diced potatoes, a bit of passata, or tinned toms, (or the sundried toms) simmer until tender, then sling in the tin of white beans. My mil does something like this and it's actually much nicer than it sounds!

White beans would go well with the tuna and olives as well, as a salad drizzled with olive oil.

You could put the frozen fruit in the bottom of a pudding basin and top it with sponge to make an upside-down fruit pudding. I think Nigella has some good recipes for smoked fish. Will find some late when not feeding the naughty baby....

Google it or I can find a link for it. Basically I ate a off pinenut and 3 days later I had awful bitter taste left in my mouth everytime I ate Sad

I didn't eat for a whole day as it was so vile! Apparently it can last up to 2 weeks but luckily for me it wasn't too bad the next day and only lasted a few days.

I took charcoal tablets and aloe vera juice which I think helped!

Haha I came on to provide some kind of recipe help but have to agree, me and DH had pine mouth last year after years of eating pine nuts (especially in the deli i used to help run) It is a living hell for a week, for us foodies out there, for definite...

Ok back to the OP I love a good smoked salmon and scrambled egg brekkie

Yes, Schupfnudeln are a basically like gnocchi but small sausage/bullet-shaped. You would fry them though, rather than boiling.
They are delicious (plus made superb BLW food (back in the day when this was relevant!) as were just the right shape and size for baby fists to hold).

I am in Germany, hence having them and brezeln (the large, soft pretzels) in my freezer :)

And yes, I have an Excel table Blush. I did it today, because I wanted an overview of everything I have in my freezer and cupboard, and I wanted to be able to sort it by type ie all meats together, so I had a really good idea of what I have in stock and what needs to be used up.

I think as long as you store them properly and don't keep them long then you should be ok.

I think I was really unlucky so I will eat them again. I just need time to get over the ordeal first Grin

I am going to insist that my DH sets me up with an Excel spreadsheet for this very purpose. It sounds perfect. I currently have any number of scrappy lists stuck to my fridge, but I like your idea better. It's more efficient. Grin
