have some left that we will not use by tomorrow when we should be on our way for our christmas holiday. they were bought last saturday, we are back in the new year.can I freeze them? the use by date says 28 dec...
You can BUT you need to crack them, separate them and pierce the yolks.On the other hand eggs often keep much longer than the use by date - you could just leave them in the fridge and check them for freshness when you get back.

I think they will be fine to be used when you come back if you don't get a chance to make the pancakes.If in doubt do the water trick. Bung them (not literally) in water and if they float they have had it iyswim.I used some eggs today which were 4 days out of date and were fine
Eggs have abest before date, not a use by. They will be fine until well into January if you've kept them out of the fridge. (eggs go off more quickly in the fridge)
I inadvertantly found that you can as I got eggs from my inlaws' hens which were frozen solid - once they defrosted, I used them and they were fine!!
