Delicious Christmas Chicken recipe ideas please...

I have made the shocking [according to my mother and a few work collegues Xmas Biscuit] decision to have a lovely fat chicken for CHristmas dinner for us three and possibly inlaws if they make it through the snow.

I am thorougly excited, have ordered a big free ranger... and now feel I need to worship it with something GORGEOUS....

Also, would love some new ideas....

I am having chicken too - DH is a veggie and dc1 isn't a big meat eater so its only me and a baby really .. . so I'll eat my fav!

Don't know what I am planning to be honest, don't often have a roast chicken nowadays so probably keep it traditional!

Mix chopped fresh tarragon, butter and plenty of seasoning together. Using fingers, separate skin from flesh and push herb butter as far down chicken breasts as you can. Its my fave with chicken.

Bone chicken - ie remove the carcase and upper leg bones, by starting with incision down the back. Fill with a carcase-sized/shaped 'block' of brussels paté. Sew up and reform into chicken shape - sometimes needs a little persuasion to get the legs back into the right place. Roast as usual. The juices from the paté make the gravy absolutely gorgeous.

Not had it myself since I did it the first night dps came for dinner. Dm necked 3 double pernods, and some home-brewed wine then raced upstairs followed by very loud being sick noises. Df, keeping his face poker straight - long practice as chief purser on passenger cruises - made some comment about her antibiotics not agreeing with her Grin.
