Egg size in a recipe

I have a recipe for Advocaat which calls for medium eggs. Can I just replace with large, or should I decrease the amounts ie it says 5 med eggs, should I use 5 large, or less?

I would probably start with four and then see if it looks like/tastes like I need more.

Would you mind sharing your recipe? DH and I drink gallons of Advocaat over Xmas Blush and I would love to try and make my own.

Never made it before so don't know what the recipe is like, but here you are:

250g caster sugar
1tbsp lemon juice
1tsp vanilla extract
250ml each brandy and evaporated milk
5 medium eggs
1 medium egg yolk

Put all ingredients in a blender and whiz for 30secs. Pour into sterilised bottle(s) and keep in fridge for up to two weeks.

We drink a load of advocaat too, usually in Snowballs, so am making some for my folks. Will do it tomorrow and let you know how I get on if you like.

Yes, pls tell me how you get on. We already have our stock in for this year Grin, so could be worth a try next.

I always crack eggs into a clear jug and then if they are the wrong size ie large instead of medium, just leave a bit behind ( with 5 eggs I'd leave about half an egg's worth behind ) when you pour.

Ok, it's made. Did 4 eggs in the end and it tastes good. Only thing I would change is that it is *very8 sweet. I would put in less sugar next time - say 50g less and then add more if needed. It's so sweet it almost hurts your teeth, ya know? Anyway, it is delicious apart from that and would recommend it, especially as it's so easy Grin

Sounds good, I'll keep your recipe for next year then. Thanks!
