I wouldn't add anything, just loads of watercress cooked in its own juice, blitzed and then add some milk. Yum
Agree with Kurri.STEP AWAY FROM THE SMASH!!!Assume you are softening an onion first? Add a little more onion and then finish at the end once blitzed with some cream if you have any. Any other veg added will take away from the vibrant watercress flavour and colour.

I never put potato in- add two heaped spoons of flour after you have softened the onion (assuming you are using a litre of milk/stock) like kurri says
