Using mascarpone as a cake filling?

If I wanted to make this soft cheese sweeter as a cake filling, can I whisk it up with icing sugar? Any idea how much for a 250g tub ? Trying to make my brother a lovely choc birthday cake and nervous...it's in the oven now.

yes, you can.
how much would depend how sweet you like it! I personally would give it just the tiniest hint of sweetness with less than a teaspoon but most people would probably do a lot more. Just do it a spoonful at a time and keep tasting it. (yum)
