Please share your top one-pot ideas while my kitchen is being ripped out

Basically I'll have access to the cooker most nights but it'll be in the middle of a building site.

I think we'll eat a fair few bacon rolls and baked potatoes. I have a handful of things in the freezer (soup, bolognaise).

I think ready meals and takeaways will cost too much.

What quick easy dinners can we do in one pan on the hob, that need minimal prep?

To add to the challenge, they have to be egg and dairy free.

Anyone got any good ideas? Many thanks

Stews of all sorts, for example, beef with bacon and red wine-yum.

Risotto? Especially easy if you buy a roasted chicken.

I have lots of ideas for 2 hobs (as that is what I've had for the last 6 years) but less for just 1 Confused

I'll have access to four rings if I need them fluffydonkey, but I want to keeps things ultra simple with minimal washing up and preferably, not much prep!

PS DH hates risotto and we never eat it :(

Chicken with honey and mustard

Serves 4

1 tbsp olive oil
8 bone-in chicken thighs , drumsticks or even breasts
2 onions , finely chopped
350g parsnips , cut into sticks
350g carrots, cut into sticks
450ml vegetable stock
3 tbsp wholegrain mustard
3 tbsp clear honey
few thyme sprigs
flat-leaf parsley , to serve (optional)

1.Heat half the oil in a large frying pan or shallow casserole with a lid. Brown the chicken until golden, then set aside. Heat the remaining oil, then cook the onions for 5 mins until softened.
2.Nestle the thighs back amongst the onions and add the parnips and carrots. Mix the stock with the mustard and honey, then pour in. Scatter over the thyme, then bring to a simmer. Cover, then cook for 30 mins until the chicken is tender, then season.

This recipe is very easy to adjust up or down for more or less people. To make it healthier you can take the skin off the thighs/drumsticks (to much faff for me )
