Delia's xmas pudding recipe - help!!

I'm just doing my online shop for the ingredients but not sure what to order for the apples & sugar.
The recipe just says apple - so is this cooking or eating?
& it also says soft brown sugar - so is this dark or light?

It probably won't make any difference, but just in case it does I thought I would ask!!

I used a cooking apple as in cooking an eating apple isnt sharp enough and lacks taste.

I use any brown sugar. Colours are only a reflection of the finished apperance.

I just used guiness, didnt bother with the other alcohol.

I steamed mine in the oven - see previous post very successful too.
