Easy Mexican starters or desserts?

Nothing too difficult please - any ideas?

The easiest mexican starter is a quesadilla, I'd say. You need grated cheddar (or other robust cheese), grated mozzarella, salsa, guacamole and some soft tortillas or wraps.

Put one tortilla flat in a dry frying pan. Spread a layer of salsa and guacamole on the tortilla and then sprinkle a generous amount of cheese all over it. Put another tortilla on top so you've effectively got a sandwich. Cook until the bottom tortilla starts to brown, then flip over (use a plate) and cook the other side. The cheese should be nice and melted.

Cut into pizza-like slices and serve while still hot. You can put a blob of sour cream and sliced olives, jalapenos etc on top if you want. Ham goes well inside it too.

pudding - churros either serve w hot choc as suggested or chocolate dip.

chilli creme caramel

I left the chilli out bc I wasn't sure if it would ruin it for my guests! But the cinnamon was a nice addition.

I never came back to say thanks for your suggestions - so .... thanks!!!!

If anyone is interested I ended up making Nigella's Mexican flan from Nigella Express. I made it in individual pots though rather than one big one - yummy but very sweet!!!!!
