So I have made my Delia mincemeat but I didn't like her pastry last year for her mince pies I didn't think it was rich enough - want something with egg in it I think. Anybody use another pastry recipe?

I use the paté brisée recipe from a book called 'Faites vos patisseries comme Lenotre', it's rich but really good and behaves well.

Here it is

250g flour
10g sugar
7g salt
175-200g butter
1 egg
1-1 1/2 tbsp milk if needed

Cut the butter into dice and process with the flour, sugar and salt until fine crumbs. Add the egg and milk if needed to come into a ball.

Wrap in cling film and put in fridge for 30 mins before rolling out. It can be frozen too.

Despite the huge amount of butter, it makes a very silky almost bread dough like pastry.
