Vegetarian idea's needed please

Hi guys,

I am planning a meal for a group of 20 (mostly children). I am doing pasta bolognese for the majority but need to cater for vegetarians (who is actually an adult), and have been asked to try and cater for those which don't like pasta.

So I am looking for a dish which can be served with a garlic bread accompaniment, isn't pasta (or pizza) and would appeal to adults primarily and potentially children.

Must also be easy and/or reheatable.

You could bung a load of sliced aubergines in the oven to roast with some garlic then layer up with tomato sauce and mozarella. That's nice with garlic bread and can also be eaten with pasta which might tick all your boxes. My children like this if that helps.

Why don't you do a veggie version of a bolognese sauce (using red lentils, onions, garlic, tomatoes, mushrooms, herbs etc) to go with the pasta for the veggie person. Then serve rice or baked potatoes for the pasta haters.

Stuffed peppers/tomatoes/aubergine? Gnocchi? Spicy pepper/tomato soup?

I know, why don't you make a vat of tomato sauce basic from onions/garlic/tomatoes etc.

Cook the meat mince and bung most of the sauce in with that, flavour with bolognese type herbs etc.

Get some quorn mince or mixed beans and add to the rest of the sauce, flavour up with mild chilli and some smoked paprika.

Meat bolognese with pasta
Veggie chilli with rice.

And garlic bread. Yum.

hmm....The aubergine idea I like...kind of like a veggie lasagne/moussaka.

i also thought about ratatouille but wondered whether that would be enough with garlic bread on it's own.

This really doesn't have to be posh nosh (it is for a Brownie pack holiday for which I am caterer)...the easier the better.

I could do veg chilli and rice but didn't think it would go with garlic bread???

I also thought about a veg stir fry...but didn't think that would go with garlic bread either...

Ok, ok...veg risotto is easy and goes brilliantly with garlic bread. Or what about leek and potato soup? Or tomato soup? Yummy.

God I'm starving now. :)

TBH I would eat garlic bread with anything

Can't be soup. Has to be a main meal (I know...tricky customer.

Never made rissotto before...is it easy? Do you have a foolproof recipe?

no :)

I've made really nice risotto (risotti?) with:

  • butternut squash and goats cheese


  • grilled red peppers and peas/parmesan


  • mixed roast veg (leftovers)


There is usually some wine involved though - but maybe ok for adults? (no idea if other people put wine in food for kids :o)

I make a similar thing to the aubergine dish, with quorn (chicken-style pieces) for added protein.

Chop the aubergine into chunks (similar size to the quorn pieces), fry aubergine and quorn in a griddle until quorn is browned and aubergine softened. Mix them up and put in a ovenproof dish, pour tomato sauce over, top with shredded/sliced mozzerella. Can be nice to put some breadcrumbs (and possibly a bit of grated hard cheese) on top to make it crispy. Bake in the oven for about 20-30 minutes.
