Coincidentally I had this for fast day dinner tonight. I had it with onions, chilli, and strips of lean pork. I fried the onion and chilli and pork in that low fat spray oil stuff then added a clump of courgetti which I stir fried for 2 minutes. It was surprisingly good. I'm sure you could have it cold but would probably need some kind of dressing on it.

Hot with bolognaise or to replace udon noodles in a miso type stir fry soupy thing with lime and coriander.

Some peeps microwave it i think. I like it in stir fry too, dp actually said are the noodles gluten free grin .

Not tried this but used courgette slices in place of pasta in a lasagne the other day and it was lovely (I'm not the biggest fan of courgette either).
