Run around, play games, do camps, DofE, wear uniforms and have fun mostly. Get teased a lot by the Marines cadets but in turn everybody mocks the Air Cadets.

ooooh I loved going to cadets! it's sort of like scouts, but with bigger and better toys and less fluffy. Cadets are expected to look after their own uniform and boots - my brother shocked my mum by getting super keen on ironing when he joined cadets ....

Going by DHs stories of being a Cadet in school, there's lots of running around in the woods in the dark, sleeping with your rifle (so it doesn't get damp) and learning to be a good enough shot that you can impress your girlfriend at 18 by being able to win oodles of soft toys at fairs even with their crappy air rifles with the sights removed.
