Cheap hot snacks - Let's make a list of them.

Thanks to the thread asking for cheap snacks I've had the idea of listing recipes for them on here. Probably been done before though?

Mine is the potato fritters

Makes 2 decent sized.

1 baking potato or any medium sized. 1 egg. 1 spring onion or veg of choice (mushrooms/peppers etc..) seasoning. Herbs of choice. I use corriander or parsley.

Grate potato. Put grated potato in the middle of a teatowel then squeeze out the excess moisture. Put potato back on a dish. Add finely chopped veg, herbs, beaten egg and seasoning, mix well. Heat up frying pan. Fry in a little oil or no oil. Cook to desired size, this makes 2 for me but could make 4 small or 1 very large. Eat as a snack or a side dish.

My DD makes this one - cheese and onion tortillas.

Take two flour tortillas or wraps, and place grated cheese and chopped spring onion (or onion) in between. Fry in dry pan so each side is toasted and hot, and the inside filling is melted. Cut into pieces, like a pizza.

Good one LineRunner. I do them with a bit of tom puree in too. Chilli and corriander for dp and I (and garlic). I'd forgotten about those.

Cheese on toast
Eggy bread
Egg on toast
Spanish omelette
Toasted pitta bread with dips
Pitta bread pizzas

You can use normal only just ripe banana instead of plantain or leave it out.

pizza pinwheels - make a big rectangle of pizza dough, rolled out thinly, add a layer of pizza topping (whatever you like but no big chunks), roll up and slice into little rounds before baking

mini onion bhajis
chickpea falafels
cheese scones
spicy fish goujons with lemon mayo

Those freezer burritos look fantastic and delicious Rosehassometoes, is cilantro corriander?

My cheap hot snack is usually a mug of soup, bit dull like.

Yes cilantro is corriander. I'm slightly obsessed with corriander grin

I made bread buns tonight to go with turkey and leek pasta bake and as an experiment didn't bother to prove them. They turned out great.

Not a hot snack as they haven't lasted long enough for chickpea burgers for tomorrow's after school snack.

I use 2 large chopped onions (not too fine)

combine with 2 eggs, breadcrumbs, seasoning, turmeric, ground cumin, fresh coriander, chopped garlic, curry powder or ground chillies (to taste), slug of EVOO and a squidge of tomato puree

if too wet add more breadcrumbs

chill and then form into little balls, then deepfry until gingery brown

eat in pittas with houmous and salad, or on their own with a wedge of lemon for squeezing

I make bhajis with gram flour. I'll try those though thanks as think dss will like prefer them.

pmsl, I promise I am not a foodie poncewanker

I saw EVOO on here and I am too lazy to type the whole thing

note that I measure quantities in slugs, splats and squidges grin

I am going to try the potato fritters, they sound like a gorgeous brekkie for my gluten intolerant dh

I'm a splatty squidger too. Except for bread. Dp is bread obsessed so it'd be sacrilege wink

Your dp will enjoy them I'm sure. Go nice with a bit of maple syrup and some bacon too. Just remember to squeeze the moisture out of that tatties. It'd still work but be softer.

the tatties. It's late and I'm tired. I should be in bed but have pots to do and need to turn this thing off. Plus a friend's been showing me her cornflake tart via FB (school type) that she's made and I'm wishing it was tomorrow as have to make one now.

I made potato cakes the other day, they were very easy and lovely when still warm from oven:
350g potatoes, cooked and mashed smoothly
Mix with 40g melted butter, 135g self raising flour and some chopped chives
Squish/roll into two rounds and cut each into quarters
Bake at 200 on greased paper for 12 minutes then turn and bake another 8 minutes

Another cheap one is puff pastry spread with tomato purée or pesto and sprinkled with cheese, maybe bits of ham or mushrooms or whatever else you want, bake in oven until done - 15-20 minutes

Spicy rice balls:
Cook rice in veg stock and spices such as turmeric, coriander, garam massala, curry powder, ginger, chill (whatever you have in really), leave the rice in the pan to absorb the stock after cooking. Once all the stock is absorbed, add frozen/tinned/veg that needs using up etc.
Form into golf ball sized balls (you can freeze them at this point to use later) and fry or oven bake.
