Left overs, what did you make with yours?

We had a big chicken instead of turkey plus cooked a gammon. Dss had gammon, bread and salad today and I did dp and I a curry. I used left over gravy too. I fried up a finely chopped onion, garlic and fresh chilli. Added cumin corriander turmeric and chilli powder. Fried some mushrooms with that then added the chicken gravy. Added chopped chicken and heated through. Served with boiled rice. Dp was dubious about the gravy but he loved it. It was pretty healthy too as only used a little oil.

Plan on making a huge batch of turkey cous-cous tomorrow. It's from one of the Annabel Karmel baby books but I tried it one time after making it for DD and it's delicious.

Basically a chopped onion gently fried in butter until softened, then add some cooked garden peas, add chicken stock, boil for 3 mins, add the cous-cous, remove from heat for 6 mins, fluff with fork and add your chopped turkey.

Sounds nice too TDP. Dss would enjoy that they like cous cous.

We had Gammon and Beef.

I plan to freeze leftovers in batches of 8 -10 slices to use for sandwiches and quick dinners.

You must've had a lot of meat wheredid to have so much left over?

DS1 is having more gammon with fries and beans. There's some left for dp to have tomorrow. Still a bit of chicken left so I'll use that with tomorrow's dinner, maybe something moroccan and add some chickpeas etc..

we had left over veg, did a few more potatoes and 'bubble and sqeaked' the lot and grilled some sausage and bacon. Making a Turkey curry tomorrow Xmas Grin

I love bubble and squeak. It's a great way to get cabbage or sprouts into dss. I made them savoury rice with chicken last night for supper, added finely chopped sprouts, carrots and swede and they loved it.

We've had fried stuffing with fried eggs for breakfast. Have made soup from left over veg and some of the boxing day ham. Tonight we had chilli noddles with sweet and sour left over meat. All yummy yummy!

That sounds great trinity. I love noodles Smile

All the meat's gone now. Made more bubble and squeak, dss had that with fried bread. Dp had some of the gammon with bubble and squeak and what was left of Christmas red cabbage. I had the remaining gammon with chutney in a sandwich. Only a few sprouts left and they'll go in some more bubble and squeak for my supper. I'll just cook up a potato some onion and carrots and fry it all up in a bit of oil.

I went mad and did a whole turkey, only 2 adults and 2 DCs, it was fantastic.

Yesterday we had salad, today I'm doing some with pasta, my lot won't eat cous-cousXmas Envy and the rest is in the freezer for future use. The dogs had bits like the soggy skin and fattey bits off the bottom.
