Mars, I have a bone to pick with you about LDC - it was dd2's first birthday and I made LDC fairy cakes and they disappeared so fast I had to hide one behind the computer for myself for later.

Could you please in future warn people to make triple quantities!

Dearest Welliemum........... what part of MN do you not read?????????? There are warning signs everywhere about the rapid disappearance of LDC. lol

I made a huge one for the family so that they could pop it in lunch boxes... finished in less than 2 days! Just got to make one for the school fair now!

Marslady - I made your LDC today for the first time. Was I meant to wait til it cooled before I iced it...cos I didn't and I don't think it's right?

hmm...maybe my icing wasn't thick enough. I can't tell I've got any on .

It's still yummy tho...if DH doesn't get home soon I'll have eaten it all

Well next time pop more icing sugar in. Of course if you want a crunchy topping mix granulated sugar with COLD lemon juice and pour over the top!

I remember copying it when I saw it on mumsnet AGES ago but I've lost it and reading this thread has reminded me just how fabulous it was.

INGREDIENTS
9 oz sugar
9 oz butter
12 oz self-rising flour
4 eggs
3 t baking powder
6 Tbsp milk
grated rind from 2 lemons
juice from these lemons separately

METHOD

Preheat oven to 325 degrees/Gas Mark 3/170C/ Mix all the ingredients together in the mixer except for lemon juice. Bake in 9 X 11 (or 13) baking dish. Bake for 30 to 40 minutes until knife comes out clean. While the cake is baking, squeeze the juice from the lemons and heat for 20 seconds or so in the microwave. Set at least one tablespoon aside to drizzle into the cake when it comes out of the oven. Take the balance of the warm lemon juice and add icing sugar (confectioners sugar) to consistency you like. As soon as you take the cake from the oven, prick cake with fork and pour over the reserved warm lemon juice. Next, spread the icing over the cake to finish it off.

I haven't tried it yet myself but did copy an paste from a previous thread to do so, hopefully this week.
