Calorie-counting

Any ideas for quick and simple lunches?

Breakfast, dinner and evening are not the problem. It is day time and lunches. So what can I eat in the middle of the day? I avoid red lentils and peanuts as they make my mouth itch and I get a red rash. Lunch should be sub 500.

I'd eat a sandwich and fruit, or soup, a salad, eggs with something, beans on a slice of toast. Pretty much all the things I eat for lunch are under 500 calories

Soup is about as quick and simple as it gets. Or try meal prepping on a Sunday and roast some vegetables, cook some pasta or rice etc to keep in the fridge and make up a salad each day. Add meat or cheese if you eat it, or maybe tofu or beans if you're veggie.

Soup is good: tinned or homemade vegetable (that way you know what exactly is in it). You could have toast, a sandwich or crackers on the side.

A salad with boiled egg, croutons, chicken/quorn mixed with some mayo. You would have to weigh the different components to work out the calories.

Cous cous, pasta with tomato sauce mixture with veg, rice and sausage, rice and chicken/veggie alternative.

I like ryvita, with cottage cheese on top and maybe some ham/chicken. With plum tomatoes and cucumber sticks on the side.

Or poached eggs on a slice of toast with tinned tomatoes.

Or soup/salad.

You can buy big tubs of soup from Aldi for a pound putting the cost at £5pw

Quicker, tastier and probably cheaper than making your own

Soups good idea esp as it is still not warm. I’ll put that on the shopping list plus more crackers. I like eggs but my body doesn’t work properly if I eat them every day! Thanks

Frozen 'giant' cous cous with Moroccan spices from Iceland.

You just pour it into your lunchbox frozen. Defrosts just in time for lunch and stays nice and cool. Really low in fat, sugar and salt. You could always have with some extra protein but I like it on it's own. Works out at 85p a portion.
