What is your favourite cake?

I bake a cake every week, quite a big one, 5 egg mixture. Usually a Victoria sponge or a chocolate cake. 12 slices, it sits under a dome and DD and DH eat it during the week.

Has anyone got a different 'ordinary' cake recipe they love that they can recommend? I am a bit bored of making the same cake - not coffee and walnut as they won't eat it.

You could make your Victoria sponge with lemon peel in the mix and lemon curd in the middle.

That sounds nice, I think I might have lemon curd in the pantry. Would you still include vanilla buttercream in the middle with that?

chocolate cake covered in chocolate buttercream icing.
Red Velvet with cream cheese icing
carrot cake?

MusicToMyEars800 Sat 27-May-17 14:19:21

I would and a lemon cake sounds good, or maybe lemon drizzle cake.

It's nice with vanilla buttercream and lemon curd, or just lemon curd. It depends on the mood I'm in (and how much of a rush!).

Banana cake with pineapple in and a cream cheese frosting is my fave.

Have you got a recipe andante? That sounds delicious.

I do chocolate butter cream and raspberry jam in my chocolate cake. Neither of them like a lot of icing so I never do anything but a 1cm layer in the middle.

I do make carrot muffins for breakfast sometimes but that has reminded me that I took a photo of a parsnip cake recipe in a good housekeeping mag when I was at the hospital last week grin, I will have a look at that.

You wouldn't believe that I have got 4ft worth of cookery and baking books in my kitchen, just lacking inspiration.

This ginger cake is lovely...

Gingercake with cherries and sultanas or raisins.
Flapjack
Chocolate tiffin
Fruity cakes - individual. Basically vanilla sponge mix and add sultanas, cherries.

I would love the ginger cake (I don't have a sweet tooth so only have one piece when it is just made) but I don't think they would. I have got all the ingredients though so could make one.

Thank you so much...forget the diet I'm baking later.

andantecantabile Sat 27-May-17 14:32:53

You won't regret it grin

Jamie Oliver's lemon meringue cake is outstanding. I leave the merengue off the top because it makes it too seeet. Without it it is delicious and beautifully sharp and the buttercream is the best I've ever made

purplecoathanger Sat 27-May-17 14:36:27

Lemon drizzle is my favourite cake but I also love chocolate cheesecake.

BarchesterFlowers Sat 27-May-17 14:37:24

Purple - I am going with your lemon zest/curd. Is it just the zest of one lemon in the cake, or two, biggish mix - 5 eggs 10oz everything else.

MusicToMyEars800 Sat 27-May-17 14:37:30

I am now in the mood to do baking!! Going to the shops to get the bit I need now. grin

Coffee & walnut is my favourite, but carrot cake is a crowd pleaser.

PurpleDaisies Sat 27-May-17 14:39:03

I'd err on the side of more lemon-two or three depending on how big they are.

bruffin Sat 27-May-17 14:39:37

Ooooh tempted to make a Victoria sponge for a half term treat now yum yum smile

ChaosTrulyReigns Sat 27-May-17 14:56:59

Great thread idea, Barch. I also have 179 cook books and severe lack of inspiration.

bruff - please please tell me more about the rhubarb cake! <<flutters eyelashes>>

I've got a carrot cake in the oven at the moment. I kid myself that carrot cake is healthy. Going to do a honeyed cream cheese icing.
