Help! Easy, tasty celebration cake recipe needed

I am lacking inspiration and need to make a cake for a family celebration - nothing overly elaborate, taste over appearance but appearance still counts. Needs to keep OK in room temp conditions for at least 24 hours.

Quick ideas as I am about to go to supermarket

A really good carrot cake - thats what my DD had for part of her wedding cake. You can cover with icing

I do love carrot cake but as a result I make it all the time so isn't quite special enough. But thank you!

I do have the recipe - let me find it - it was trialled to get best results smile
Carrot Cake

200 gm self raising flour
115 gm plain flour
350 gm brown sugar
2 tsps cinnamon
2 tsps bicarbonate of soda
250 ml sunflower oil (or rapeseed oil)
3 large carrots peeled and grated
4 medium eggs
100 gm raisins
100-140 gm chopped hazelnuts - some fine, some a bit coarser chopped
zest of 1 orange

Mix together all the dry ingredients
Add orange zest
Mix in the carrot, and gradually beat in the oil and eggs.
Pour into a greased and lined 20 cm square cake tin
bake in a preheated oven 180ºC /160ºfan/gas mark 4 for 45-55 minutes

1 lemon and the rest of the orange
Icing sugar

Remove all the outer pith of the lemon and orange , then segment , squeeze out any juice that is left in the skin, add icing sugar in a bowl with the segments. Mix and spread over cake

For what it is worth I made a chocolate cake and filled it with strawberries and vanilla marscapone I took strawberries and marscapone separately in a cool bag and did the prep at the last minute.
