hot cross buns

Anybody have an idea why Paul Hollywood's hot cross bun recipe on the Easter TV show has a different recipe from his book? Not just ingredient quantities (the fruit etc seemed a huge amount in the book recipe) but when to add the fruit, how many eggs, how much milk etc. I found the second rise very slow (fighting against all that fruit perhaps)

There was a thread last night where they found leaving it to prove for at least 2 hours helped.
