Really reliable thick custard for baking in a cake - recipe anyone?

I have a knock out rhubarb and custard cake recipe but it just says to thicken a bought custard with a teaspoon of cornflour for the custard layer. I want to make it for a bake off so that won't really cut it! My normal custard recipe is more if a pouring sauce and quite often goes grainy anyway, does anyone know a fool proof thick custard recipe?

google for creme patissiere....Paul Hollywood's recipe is pretty reliable I think...the one on his custard slice recipe.
